About Takahashi Shoten:
Takahashi Shoten is located on Shodo Island, which is an island that is famous for soy sauce production. Shodo island had 400 soy sauce breweries at its peak. Currently it is down to only 22 breweries. Takahashi Shoten is a venerable manufacturer that has been in operation since the beginning of the soy sauce brewery industry on Shodo island. It was founded in 1852 as a grain distributor and began its soy sauce brewery in 1863.
Nagayamon (the old koji (malted rice) manufacturing room, which was built around the end of the Edo period), the soy sauce plant, the storehouse, the eastern storehouse, and the main building are all designated as registered tangible cultural properties.
Vision / Passion / Specialty:
Takahashi Shoten produces koikuchi (regular color) soy sauce, whole soybean soy sauce (aged in a kioke barrel) and saishikomi (double-brewed) soy sauce .
However, their featured products is fava bean soy sauce, which has a perfect soy sauce taste and is made with traditional techniques. Only fava beans and salt are used in the production process.
Normally, soy sauce is made from soy beans and wheat. However, some people have soy and wheat allergies so they cannot enjoy soy sauce.
Takahashi Shoten did research into how to make soy sauce without using soybeans and wheat. After working for 2 years with various ingredients, they came to the idea of using fava beans. They also have other products that use their fava bean soy sauce, such as mentsuyu (noodle soup base), tukudani (food boiled in soy sauce), and miso.
