Goma-ae (Vegetables with Sesame Dressing)

Introduction:

Goma-ae is a simple salad dish with boiled vegetables and a sesame dressing. The secret of cooking this dish is to put a small amount of soy sauce in with the boiled vegetables, which is called shoyu arai (washing with soy sauce). If you do not have any sesame seeds, you can also make this dish with peanuts or walnuts.

Ingredients:

boiled vegetables (2 servings)

A. 200 grams of spinach, cabbage or other leafy vegetables
B. 200 grams of string beans, okra, carrots or mushrooms
1 teaspoon of soy sauce for shoyu arai

 

【Sesame Dressing】

  • 2 tablespoons black sesame seeds
  • 2 1/2 teaspoons soy sauce
  • 3 teaspoon sugar

【Peanut or Walnut Dressing】

  • 30 grams of peanuts or walnuts
  • 2 1/2 teaspoon soy sauce
  • 3 teaspoon sugar

Instructions:

  1. Boil the vegetables.
  2. For the vegetables listed in A: After the vegetables are cooked, put them in water and let them cool. Finally transfer them to a strainer.
  3. For the vegetables listed in B: After the vegetables are cooked, transfer them to a strainer and let them cool.
  4. Cut the vegetables to a size that is easy to eat and put them in the bowl. Add soy sauce for shoyu arai and mix it in well.
  5. For vegetables A, after the shoyu arai squeeze them gently with your hands to remove any excess moisture.
  6. Put black the sesame seeds (or the peanuts or walnuts) in a sealable plastic bag and use a rolling pin to crush the seeds. If you are using ground sesame seeds, you can skip this step.
  7. Put the remaining soy sauce, sugar and crushed sesame seeds in a bowl and mix them well.
  8. Add vegetables into the sauce and mix them well.
  9. Serve it on a plate and enjoy!
