Introduction:

Teriyaki is a type of dish which is flavored with a salty-sweet sauce that is a mixture of soy sauce, rice wine (sake) and sugar.
The sugar content in the sauce makes the whole dish shine after being cooked, so it is called shine, or "teri" in Japanese. Yaki means "to cook" in Japanese so this dish, which is cooked with the sauce, is called "teriyaki."
This time we will introduce one of the Japanese favorite meals, teriyaki chicken. The fat of the chicken matches with the sauce and creates a savory taste.

Ingredients:

Main Ingredients:

  • 180 grams chicken thigh

Topping Ingredients:

  • 50 grams of green onion
  • Salt
  • Starch powder
  • 3 tablespoon olive oil

Sauce Ingredients:

Option 1 (standard in Japan):

  • 45 milliliters rice wine (sake)
  • 15 grams of brown sugar
  • 20 milliliters Japanese soy sauce

Option 2 (recommendation for outside of Japan):

  • 65 milliliters white wine
  • 15 grams of honey
  • 15 grams of brown sugar
  • 20 milliliters Japanese soy sauce

Instructions:

  1. Cut the green onion into 5-centimeter lengths.
  2. Salt the chicken before covering it with starch powder thinly and evenly.
  3. Fry the green onion in a frying pan until it becomes soft.
  4. Pour olive oil into another frying pan. Put the chicken face down in the heated frying pan and cook it on medium heat. Bake both sides completely for about 5 minutes on each side.
  5. After browning the chicken, wipe off extra fats with a paper towel.
  6. After turning off the heat, put the sauce ingredients into the frying pan with the chicken and blend everything together.
  7. Fry on low heat for 2 or 3 minutes, flipping the chicken until the sauce starts to shine.
  8. Place the chicken on the plate with the green onion as a side dish and you are finished.
