INTRODUCTION:
Marinated vegetables are refreshing and delicious. If you add soy sauce and make them in the Japanese style, you can enjoy a different marinade from usual. You can also enjoy the recipe with other vegetables.
INGREDIENTS:
- 1/4 pumpkin
- 4 eggplants
- 5 asparagus stalks
- 8 cherry tomatoes
- 1 clove of garlic
- 2 tablespoons of olive oil
Marinade
- 3 tablespoons of vinegar
- 3 tablespoons of soy sauce
- 2 teaspoons of sugar
- 2 tablespoons of olive oil
- 2 tablespoons of chopped onions
INSTRUCTIONS:
- Heat the pumpkin in a microwave to soften it before cutting it into bite sized pieces. Cut the eggplant into bite sized pieces. Cut the asparagus into 3 centimeter lengths. Continue by cutting the cherry tomatoes in half and chopping the onions and garlic.
- Add the olive oil and garlic into a frying pan and heat the mixture until you can smell the cooking garlic.
- Add pumpkin, eggplant and asparagus to the mixture and fry them
- Put the ingredients of marinade and the cherry tomatoes in a bowl and mix well
- Put the fried vegetables into the same bowl and mix well
